Train tickets.

Question

Right, I bought a train ticket in advance, off the Internet, when I booked it I had to choose specific journey times. When I've printed the tickets out they don't have the times printed on them, it just says the start date and off peak. So, does this mean there's no way for them to know which trains I was supposed to catch and I can just jump earlier/later trains without any hassle?

OK, from what you have written, you have bought an off-peak ticket in advance, not to be confused with an Advanced ticket.

The off-peak ticket allows you to travel on any train on a specific route (mentioned on the ticket) in OFF-PEAK hours; usually after 09:30 and before 16.00 Mon-Fri and anytime weekends. The usually ask for a time as a) they can get an idea of service numbers, and b) if you want to reserve a seat; no seat reservation and you may end up standing.

If you buy an ADVANCED seat you can only travel on that specific train; time will be on your ticket. Miss the train and your ticket is worthless.
