so they were trialling this vaccine before the pandemic started? must be a simple explanation, but I don't know it.

2 years from second dose, 365*2 +28 (plus one for luck).

We're currently at day 150-200 or so.

And that's how clinical trials work.  They give the medicine, then look to see how well it works (perhaps a 3 month period).  And, and this is important, they keep looking at the trial participants for some time (years) to check that nothing unexpected happens after.  It is called pharmacovigilance, and for some reason we're being told that it isn't part of the studies undertaken for covid.  

[What's more, the details of the clinical trial participated in are included in the participants medical records, so that anything weird occurring even years later can be spotted.  This is called extended pharmacovigilance.]
