I bought some cricket flour a few years ago when it seemed to be the future.

You can't actually substitute the normal wheat flour in a recipe one for one but rather bulk out the recipe with cricket dust.

Apparently loads of protein etc although someone else ended up making muffins for me and they ended up incredibly dry although not sure whether that was their kitchen skills or not.

Those fresh fried crickets you see on blaze TV etc look much more appealing.  Probably because their heavily fried in oil, crispy, and covered in salt.

All the same I can see clean, organic cricket farms and resultant processed foods being a big growth area in the near future.

I got some cricket biscuits for Christmas once, they were iirc 20% cricket. Didn't like them but think it was just psychological, they just tasted of nothing.
